Leccino Olives have the reputation for being the most cultivated in the world. These olives are round shaped and small to medium size. The are characterized by their light and dark tan mottled colouring. This is due in part to the way that they ripen from the tip upward rather than the other way around. This again makes them highly regarded as they ripen even after being picked.
They are firm and crunchy and the flesh is firmly joined to the seed. Although they have a nice fruity taste they are also quite salty when cured and have a slightly bitter aftertaste. They are often used to blend with other olive oils for extra robust flavour notes.
