Materiaprima Sweet and Sour Cipolline Onions 1.6 kg


“Cipollini” means little onion. It is a heirloom variety also known as Borettana onions after the town of Boretto in Emilia Romagna near Bologna where they are grown. They are small, flat, thin skinned yellow onions with quite a bit of residual sugar. Their shape and sweetness make them perfect for roasting and for pickling. Being a seasonal product tricky to grow, they are traditionally preserved.
Serving suggestions:
* Chop the onions and mix  into warm potatoes with parsley, dill and mayonnaise
* Make a jus or sauce by chopping some onions into the reduced sauce for lamb or beef.
* Dice into a smoked fish pate
* Mix with cream cheese and herbs for a dip
* Serve with Cornichons for a Raclette
* Add to meatballs for a great contrast
* Mix through salsa of tomatoes and roasted capsicums
AND don’t throw out the pickling liquid because it makes a great dressing!
