Neromodena/ Tondo make vinegars with a great modern twist. The balsamic vinegar that goes into this infusion is produced traditionally in Emillia Romagnia, where the grapes are picked and made into saba, adding the reduced essence of fig before maturing in barrels.
This is a medium sweet and sour vinegar that has a lovely fruity hint of fig. Great for dressing salads and cheeses. add a little brown sugar to make a great dressing for fruit.
