The Cavedoni family has been making vinegar since 1860, that’s around 5 generations.This IGP (Protected Geographic of Origin) product of Modena is the perfect balance of sweetness and acidity. Caratello is made in a traditional way, using reduced Trebbiano grape must with a small addition of wine from their own vineyard. It ferments naturally in the same oak casks used for generations. It evaporates over years producing the complex characters of a well aged traditional balsamic.
This viscous, dark, rich vinegar has notes of apple and treacle and is an exceptional value for money balsamic justifying its wide and faithful following.
