The Campisi family have been preserving for generations near Pachino in Sicily . Along with fish products and salt they produce this local “Pachino” Cherry Tomato sauce. The cherry tomatoes used to crush this sauce are a protected species and can only be labeled this way if they are the genuine certified locally grown product . The sauce is a deep red and has a fresh just crushed flavour with a hint of fresh basil. It is ideal for any pasta dishes  & sauces and would be great in a Bloody Mary. Expensive?. Yes but a naturally sweet fresh tomato sauce that will lift any dish and well worth the price.
