The Bennaxi family have been producing this vinegar from the Vernaccia grapes they grow for their wine. Located in the Tirso Valley wine growing region in the heart of Sardinia, Vernaccia produces a wine with crisp acidity and aromas of grapefruit, pears and apple that develop in the vinegar too. They age the vinegar in chestnut barrels for 3-4 years which is most unusual for vinegars.
It’s a tiny production so they bottled it in 100ml with a spray applicator to ensure not a drop is wasted. It has a low acidity and a lovely flavour!
